Ingredients 

Meatballs

  • 1 lb ground beef
  • ½ cup uncooked white rice
  • 1 egg beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Soup

  • 8 cups beef broth
  • 1 onion chopped
  • 2 carrots sliced
  • 2 zucchini sliced
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ cup cilantro chopped

Instructions 

  1. In a mixing bowl, combine ground beef, rice, egg, garlic powder, salt, and black pepper. Mix well and form into small meatballs.
  2. In a large pot, bring beef broth to a boil. Add the meatballs carefully and reduce heat to a simmer.
  3. Add chopped onion, sliced carrots, and zucchini to the pot. Stir in diced tomatoes, oregano, and cumin. Simmer for about 30 minutes until vegetables are tender and meatballs are cooked through.
