Ingredients 

Meatballs

  • 1 lb Ground Beef
  • 1 Egg
  • ¼ cup Rice uncooked
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Soup

  • 8 cups Chicken Broth
  • 1 Onion chopped
  • 2 Carrots sliced
  • 2 Zucchini sliced
  • 1 can Tomato Sauce 15 oz
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • to taste Salt and Pepper

Instructions 

  1. 1. In a mixing bowl, combine ground beef, egg, rice, garlic powder, salt, and pepper. Mix well and form into meatballs.
  2. 2. In a large pot, bring chicken broth to a boil. Add the meatballs carefully.
  3. 3. Add chopped onion, carrots, zucchini, tomato sauce, cumin, and oregano to the pot. Stir well.
  4. 4. Reduce heat and simmer for 30-40 minutes, until vegetables are tender and meatballs are cooked through.
  5. 5. Season with salt and pepper to taste. Serve hot.
