  • 6 cups potatoes, peeled and cubed
  • 3 large eggs, hard-boiled and chopped
  • 1 cup celery, chopped
  • 1 cup onion, finely chopped
  • 1 cup mayonnaise
  • ¼ cup white vinegar
  • ¼ cup sugar
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Boil potatoes in a pot until tender, about 10-15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine potatoes, eggs, celery, and onion.
  3. 3. In a separate bowl, mix mayonnaise, vinegar, sugar, mustard, salt, and pepper.
  4. 4. Pour dressing over potato mixture and toss to coat.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
