Ingredients

  • 2 cups arugula
  • ½ cup parmesan cheese, grated
  • ½ cup olive oil
  • ¼ cup pine nuts toasted
  • 2 cloves garlic
  • 1 tablespoon lemon juice freshly squeezed
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper freshly ground

Instructions 

  1. Combine arugula, parmesan, pine nuts, garlic, and lemon juice in a food processor.
  2. Pulse until the mixture is finely chopped.
  3. With the processor running, slowly add olive oil until the pesto is smooth.
  4. Season with salt and pepper to taste.
