Main Ingredients
- 2 cups arugula
- ½ cup parmesan cheese, grated
- ½ cup olive oil
- ¼ cup pine nuts toasted
- 2 cloves garlic
- 1 tablespoon lemon juice freshly squeezed
- ¼ teaspoon salt
- ¼ teaspoon black pepper freshly ground
Combine arugula, parmesan, pine nuts, garlic, and lemon juice in a food processor.
Pulse until the mixture is finely chopped.
With the processor running, slowly add olive oil until the pesto is smooth.
Season with salt and pepper to taste.
