- 2 pounds potatoes Yukon Gold or red potatoes, peeled and sliced
- 6 slices bacon diced
- 1 cup onion chopped
- ¼ cup apple cider vinegar
- ¼ cup water
- 3 tablespoons granulated sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
- 2 tablespoons fresh parsley chopped
1. Boil the potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and set aside.
2. In a skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
4. Stir in the apple cider vinegar, water, sugar, Dijon mustard, salt, and pepper. Bring to a boil.
5. Pour the hot dressing over the cooked potatoes and gently toss to coat. Add the crispy bacon and chopped parsley. Serve warm.
