  • 2 ripe avocados
  • 2 cups vegetable broth
  • 1 cup plain yogurt
  • 1 lime, juiced
  • 1 clove garlic, minced
  • to taste salt and pepper
  • for garnish fresh cilantro

Instructions 

  1. 1. Cut the avocados in half, remove the pit, and scoop out the flesh.
  2. 2. In a blender, combine avocado, vegetable broth, yogurt, lime juice, and minced garlic.
  3. 3. Blend until smooth. Season with salt and pepper to taste.
  4. 4. Chill in the refrigerator for at least 30 minutes before serving.
  5. 5. Serve cold, garnished with fresh cilantro.
