Ingredients 

Pancake Batter

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 4 Eggs
  • 1 teaspoon Baking powder
  • ½ cup Water

Filling

  • 1 cup Sweetened azuki bean paste

Instructions 

  1. In a mixing bowl, whisk together the eggs and sugar until frothy.
  2. Sift in the flour and baking powder, then add water. Mix until smooth.
  3. Heat a non-stick pan over medium heat. Pour a small amount of batter to form small pancakes.
  4. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  5. Spread azuki bean paste on one pancake and sandwich with another.
