  • 4 large potatoes baked and cubed
  • 1 cup sour cream
  • ½ cup mayonnaise
  • ¼ cup green onions chopped
  • ½ cup bacon bits cooked and crumbled
  • 1 cup cheddar cheese shredded

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes for about 45 minutes or until tender. Let them cool, then cube them.
  3. In a large mixing bowl, combine the sour cream, mayonnaise, green onions, bacon bits, and cheddar cheese.
  4. Gently fold in the cubed potatoes. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 1 hour before serving.
