Ingredients 

Main Ingredients

  • 4 large russet potatoes
  • 2 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tablespoon chopped green onions
  • 0.5 cup sour cream

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean and pierce them with a fork. Bake for 45 minutes, or until tender.
  3. Let the potatoes cool slightly, then cut them in half lengthwise. Scoop out most of the flesh, leaving a bit to support the skins.
  4. Brush the potato skins with olive oil, inside and out. Place them on a baking sheet, skin-side up, and bake for 10 minutes.
  5. Flip the skins over and fill them with cheese and bacon. Return to the oven and bake until the cheese is melted and bubbly, about 5-10 minutes.
  6. Remove from the oven and sprinkle with green onions. Serve with sour cream on the side.
