Ingredients

  • 2 cups Broccoli florets
  • 2 cups Carrot slices
  • 1 cup Bell pepper strips
  • ¼ cup Balsamic vinegar
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine broccoli, carrots, and bell peppers.
  3. Add balsamic vinegar, olive oil, salt, and black pepper. Toss to coat.
  4. Spread vegetables evenly on a baking sheet.
  5. Roast in preheated oven for 30 minutes, stirring halfway through.
  6. Serve warm.
