Main Ingredients
- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 3 ripe bananas, mashed
- 0.75 cup granulated sugar
- 1 large egg, beaten
- ⅓ cup butter, melted
- 1 cup fresh strawberries, diced
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, mix the mashed bananas, sugar, egg, and melted butter.
Stir the banana mixture into the flour mixture until just combined. Fold in the diced strawberries.
Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
