- 3 lbs Beef Chuck Roast cut into chunks
- 3 cloves Garlic minced
- 2 teaspoon Ground Cumin
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ teaspoon Ground Cloves
- 3 tablespoon Apple Cider Vinegar
- 2 Chipotle Peppers in Adobo Sauce chopped
- 1 cup Beef Broth
- 1 Bay Leaf
1. Blend garlic, cumin, oregano, salt, pepper, cloves, vinegar, and chipotle peppers in a blender until smooth.
2. Place beef chunks in the slow cooker. Pour the blended mixture over the beef.
3. Add beef broth and bay leaf to the slow cooker.
4. Cover and cook on low for 8 hours, until the meat is tender and easily shredded.
5. Shred the meat with two forks and mix it with the juices in the slow cooker.
6. Serve hot with your favorite toppings and sides.
