Main Ingredients
- 3 lbs beef chuck roast
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 chipotle peppers in adobo sauce
- ¼ cup lime juice
- ¼ cup apple cider vinegar
- 3 bay leaves
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon ground cloves
- Salt and pepper to taste
- Corn tortillas
- Toppings: chopped cilantro, diced onions, lime wedges
Cut the beef into large chunks and season with salt and pepper.
In a slow cooker, combine beef, garlic, onion, chipotle peppers, lime juice, apple cider vinegar, bay leaves, cumin, oregano, and cloves.
Cook on low for 8 hours until the beef is tender and easily shredded.
Shred the beef with two forks and mix it with the juices in the slow cooker.
Serve the barbacoa on corn tortillas with your favorite toppings.
