Main Ingredients
- 2 lbs beef bones
- 1 onion, quartered
- 2 carrots, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, smashed
- 1 tablespoon peppercorns
- 1 gallon water
1. Preheat oven to 400°F (200°C).
2. Place beef bones on a baking sheet and roast for 30 minutes.
3. Transfer roasted bones to a large pot.
4. Add remaining ingredients to the pot.
5. Bring to a boil, then reduce heat and simmer for 4 hours.
6. Strain the stock and discard solids.
7. Let the stock cool, then refrigerate or freeze.
