- 1 whole Beef Tongue
- 1 large Onion quartered
- 4 cloves Garlic peeled
- 2 teaspoon Salt
- 1 bunch Cilantro chopped
- 8 small Corn Tortillas
- 1 cup Salsa your choice
- 2 whole Limes cut into wedges
1. Rinse the beef tongue under cold water.
2. Place the tongue in a large pot and cover with water.
3. Add the onion, garlic, and salt to the pot.
4. Bring to a boil, then reduce heat and simmer for 4 hours.
5. Remove the tongue from the pot and let it cool slightly.
6. Peel off the outer layer of the tongue and discard.
7. Slice the tongue into thin strips.
8. Warm the corn tortillas in a dry skillet.
9. Assemble the tacos with tongue slices, chopped cilantro, salsa, and lime wedges.
