Beet and Goat Cheese Crostini
A simple and elegant appetizer featuring roasted beets and creamy goat cheese on crispy crostini.

Main Ingredients
- 2 medium beets roasted and diced
- 4 oz goat cheese softened
- 1 baguette French bread sliced into ½ inch slices
- 2 tablespoon olive oil
- 1 tablespoon honey
- to taste salt
- to taste black pepper
Preheat the oven to 400°F (200°C).
Place beet slices on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes until tender.
While beets are roasting, slice the baguette and arrange on another baking sheet. Drizzle with olive oil and toast in the oven for 10 minutes or until golden brown.
In a mixing bowl, combine softened goat cheese and honey. Mix until smooth.
Spread the goat cheese mixture on each toasted baguette slice.
Top with roasted beets, and season with salt and pepper to taste.
Serve immediately and enjoy!
