Ingredients 

Main Ingredients

  • 4 medium beets trimmed and scrubbed
  • ¼ cup walnuts chopped
  • ¼ cup goat cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and place on a baking sheet. Roast in the preheated oven until tender, about 30 minutes. Let cool, then peel and cut into cubes.
  3. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
  4. Add the beet cubes to the bowl and toss to coat with the dressing.
  5. Top with crumbled goat cheese and chopped walnuts before serving.
