Beet Soup Recipe

Main Ingredients
- 4 cups beets, peeled and diced
- 1 cup carrots, diced
- 1 cup onions, chopped
- 4 cups vegetable broth
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoon lemon juice
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions and carrots, and sauté until softened, about 5 minutes.
3. Add the beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the beets are tender.
4. Use a blender to puree the soup until smooth. Return to the pot.
5. Stir in the lemon juice, salt, and pepper. Adjust seasoning to taste.
6. Serve hot, garnished with a dollop of sour cream or fresh herbs if desired.
