Ingredients

  • 4 cups beets, peeled and diced
  • 1 cup carrots, diced
  • 1 cup onions, chopped
  • 4 cups vegetable broth
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon lemon juice

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onions and carrots, and sauté until softened, about 5 minutes.
  3. 3. Add the beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the beets are tender.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot.
  5. 5. Stir in the lemon juice, salt, and pepper. Adjust seasoning to taste.
  6. 6. Serve hot, garnished with a dollop of sour cream or fresh herbs if desired.
