Ingredients 

Main Ingredients

  • 1 cup warm water
  • ¼ oz active dry yeast
  • ½ cup sugar
  • 2 pcs eggs beaten
  • 1 cup evaporated milk
  • 7 cups flour
  • ¼ cup shortening melted
  • ½ teaspoon salt
  • 1 qt vegetable oil for frying
  • 1 cup powdered sugar for dusting

Instructions 

  1. In a large bowl, combine warm water, yeast, and a pinch of sugar. Let sit for 10 minutes until frothy.
  2. In another bowl, beat eggs and add evaporated milk. Mix well.
  3. Add egg mixture to the yeast mixture. Stir in 3 ½ cups of flour and mix until smooth.
  4. Add melted shortening and salt. Gradually add remaining flour until dough is smooth and elastic.
  5. Cover dough and let rise in a warm place for 2 hours.
  6. Heat oil in a deep fryer to 375°F (190°C).
  7. Roll out dough on a floured surface to ¼ inch thickness. Cut into 2-inch squares.
  8. Fry beignets in hot oil until golden brown, about 2-3 minutes per side. Drain on paper towels.
  9. Dust with powdered sugar and serve warm.
