  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 small red onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 taco shells
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup sour cream
  • ½ cup shredded cheese
  • ¼ cup cilantro chopped

Instructions 

  1. 1. Heat a skillet over medium heat. Add the chopped onion and bell pepper, cook until softened.
  2. 2. Add the minced garlic, ground cumin, and chili powder. Cook for another minute.
