- 1 can black beans drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 small red onion chopped
- 1 bell pepper chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 8 taco shells
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup sour cream
- ½ cup shredded cheese
- ¼ cup cilantro chopped
1. Heat a skillet over medium heat. Add the chopped onion and bell pepper, cook until softened.
2. Add the minced garlic, ground cumin, and chili powder. Cook for another minute.
3. Stir in the black beans and corn. Cook until heated through.
4. Warm the taco shells according to package instructions.
5. Assemble the tacos by filling each shell with the bean and corn mixture. Top with shredded lettuce, diced tomatoes, sour cream, shredded cheese, and chopped cilantro.
