Black Bean And Sweet Potato Tacos

Main Ingredients
- 2 cups diced sweet potatoes
- 1 can black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 8 small tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup sour cream
- ½ cup salsa
Preheat oven to 400°F (200°C).
In a mixing bowl, toss diced sweet potatoes with olive oil, cumin, chili powder, and salt.
Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender.
In a skillet, heat black beans over medium heat until warm.
Warm tortillas in the oven or on a skillet.
Assemble tacos by placing sweet potatoes and black beans on tortillas. Top with lettuce, tomatoes, sour cream, and salsa.
