Ingredients 

Main Ingredients

  • 2 cups diced sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup sour cream
  • ½ cup salsa

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss diced sweet potatoes with olive oil, cumin, chili powder, and salt.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender.
  4. In a skillet, heat black beans over medium heat until warm.
  5. Warm tortillas in the oven or on a skillet.
  6. Assemble tacos by placing sweet potatoes and black beans on tortillas. Top with lettuce, tomatoes, sour cream, and salsa.
