Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Black beans, drained and rinsed
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 cup Corn kernels
  • 4 Large flour tortillas
  • 1 cup Shredded cheese
  • 1 Avocado, sliced
  • 1 Salsa

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and cook until soft.
  3. Add minced garlic and cook for another minute.
  4. Add black beans, cumin, and chili powder. Stir well.
  5. Add corn kernels and cook until heated through.
  6. Warm tortillas in a separate skillet or microwave.
  7. Fill tortillas with the bean mixture, cheese, avocado slices, and salsa.
  8. Roll up the tortillas and serve warm.
