Black Bean Huevos Rancheros

- 1 tablespoon Olive Oil
- 1 cup Black Beans cooked
- 4 Eggs
- 1 cup Tomato Sauce
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- 1 tablespoon Fresh Cilantro chopped
Heat olive oil in a skillet over medium heat.
Add black beans, tomato sauce, cumin, chili powder, and salt. Cook for 5 minutes.
Make four wells in the bean mixture and crack an egg into each well.
Cover the skillet and cook until the eggs are set, about 10 minutes.
Garnish with fresh cilantro and serve immediately.
