Ingredients

  • 1 cup rice uncooked
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 2 cups water
  • 1 lime juiced
  • ¼ cup cilantro chopped

Instructions 

  1. 1. In a pot, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 20 minutes.
  2. 2. In a pan, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  3. 3. Stir in black beans, cumin, and salt. Cook for 5-7 minutes.
  4. 4. Combine cooked rice with the bean mixture. Stir in lime juice and cilantro.
  5. 5. Serve warm.
