Blueberry Cheesecake Bars

Crust
- 1.5 cups graham cracker crumbs
- 0.5 cups melted butter
- 0.25 cups sugar
Filling
- 16 oz cream cheese softened
- 0.75 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup blueberries fresh or frozen
Preheat oven to 325°F (165°C). Grease a 9x13 inch baking pan.
In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press mixture into the bottom of the prepared pan.
In another bowl, beat cream cheese and ¾ cup sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
Gently fold in blueberries. Pour mixture over the crust.
Bake for 45 minutes or until the center is set. Cool completely before cutting into bars.
