Blueberry Lemon Bars
A delightful treat combining the tartness of lemon with the sweetness of blueberries.

Crust
- 1 cup all-purpose flour
- ¼ cup sugar
- ½ cup butter, melted
Filling
- 2 large eggs
- 1 cup sugar
- ¼ cup all-purpose flour
- ½ cup lemon juice freshly squeezed
- 1 tablespoon lemon zest
- 1 cup blueberries fresh or frozen
Preheat your oven to 350°F (175°C). Grease a baking dish.
In a mixing bowl, combine 1 cup of flour and ¼ cup of sugar. Stir in the melted butter until well combined. Press the mixture into the bottom of the prepared baking dish.
Bake the crust for 15 minutes, or until lightly golden. Remove from the oven and set aside.
In another bowl, whisk together the eggs, 1 cup of sugar, ¼ cup of flour, lemon juice, and lemon zest until smooth. Gently fold in the blueberries.
Pour the filling over the pre-baked crust. Bake for an additional 30 minutes, or until the filling is set.
Allow the bars to cool completely in the baking dish before cutting into squares. Enjoy!
