Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 zest of 1 lemon

Instructions 

  1. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients. Stir until just mixed.
  4. Fold in blueberries and lemon zest.
  5. Heat a griddle over medium heat. Grease lightly.
  6. Pour ¼ cup batter for each pancake. Cook until bubbles form, then flip.
  7. Cook until golden brown. Serve warm.
