Instructions
In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
Combine wet and dry ingredients. Stir until just mixed.
Fold in blueberries and lemon zest.
Heat a griddle over medium heat. Grease lightly.
Pour ¼ cup batter for each pancake. Cook until bubbles form, then flip.
Cook until golden brown. Serve warm.
