Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup sugar
  • 3 eggs
  • ½ cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest grated
  • ½ cup heavy cream
  • 1 cup blueberries fresh

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in egg yolk and cold water until dough forms. Press dough into a tart pan.
  3. Bake crust for 15 minutes. Let cool.
  4. In another bowl, whisk together sugar, eggs, lemon juice, lemon zest, and heavy cream. Pour into cooled crust.
  5. Bake for 30 minutes or until filling is set. Let cool completely.
  6. Top with fresh blueberries before serving.
