Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2 tablespoon sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 unit egg beaten
  • 2 tablespoon vegetable oil
  • 1 cup blueberries fresh or frozen

Instructions 

  1. 1. In a mixing bowl, combine the oats and milk. Let sit for 5 minutes.
  2. 2. Add the flour, sugar, baking powder, and salt to the oat mixture. Stir to combine.
  3. 3. Add the beaten egg and vegetable oil to the mixture. Stir until just combined.
  4. 4. Gently fold in the blueberries.
  5. 5. Heat a griddle or frying pan over medium heat. Lightly grease with oil or butter.
  6. 6. Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. 7. Serve warm with your favorite toppings.
