Blueberry Streusel Muffins

Muffins
- 1.5 cups all-purpose flour
- 0.75 cup sugar
- 0.5 teaspoon salt
- 2 teaspoons baking powder
- 0.33 cup vegetable oil
- 1 large egg
- 0.33 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Streusel Topping
- 0.5 cup sugar
- 0.33 cup all-purpose flour
- 0.25 cup butter, cubed
- 1.5 teaspoons ground cinnamon
Preheat oven to 400°F (200°C). Grease muffin tin or line with muffin liners.
In a large bowl, mix together 1.5 cups flour, 0.75 cup sugar, salt, and baking powder.
In a small bowl, combine vegetable oil, egg, milk, and vanilla extract. Add to flour mixture and mix until just combined. Fold in blueberries.
Fill muffin cups to the top, and sprinkle with streusel topping mixture.
To make streusel topping: Mix together 0.5 cup sugar, 0.33 cup flour, butter, and 1.5 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
