Main Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup sugar
- 1 cup grated zucchini
- 1 cup fresh blueberries
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, mix the flour, baking powder, baking soda, and salt.
In another bowl, beat the eggs, then add the sugar, oil, and vanilla extract. Mix well.
Stir in the grated zucchini and blueberries into the wet mixture.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Pour the batter into the prepared loaf pan.
Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
