- 2 whole wheat pita pockets
- 4 eggs beaten
- ¼ cup bell pepper diced
- ¼ cup onion diced
- ¼ cup cheddar cheese shredded
- 1 tablespoon olive oil
- salt and pepper to taste
1. Heat olive oil in a skillet over medium heat.
2. Add diced bell pepper and onion. Sauté until softened.
3. Pour beaten eggs into the skillet. Cook, stirring frequently, until scrambled.
4. Season with salt and pepper to taste.
5. Warm pita pockets in the microwave or oven.
6. Fill each pita pocket with scrambled eggs, veggies, and shredded cheese.
