  • 2 large flour tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 2 eggs
  • 1 tablespoon butter
  • ¼ cup salsa

Instructions 

  1. 1. In a skillet, melt butter over medium heat.
  2. 2. Whisk eggs in a bowl and pour into the skillet. Scramble until fully cooked.
  3. 3. Remove eggs from skillet and set aside.
  4. 4. Place one tortilla in the skillet, sprinkle half the cheese, add scrambled eggs, and top with salsa.
  5. 5. Sprinkle the remaining cheese and place the second tortilla on top.
  6. 6. Cook until the bottom tortilla is golden brown, then flip and cook the other side.
  7. 7. Remove from skillet, cut into wedges, and serve hot.
