Ingredients

  • 1 cup buckwheat flour
  • 1 cup all-purpose flour
  • 2 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 2 eggs large
  • ¼ cup butter melted

Instructions 

  1. In a large mixing bowl, whisk together the buckwheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, eggs, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a griddle or skillet over medium heat and lightly grease it. Pour ¼ cup of batter for each pancake onto the griddle.
  5. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, about 1-2 minutes more.
  6. Serve warm with your favorite toppings.
