Ingredients

  • 1 large butternut squash peeled, seeded, and cubed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ½ teaspoon ground nutmeg

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the butternut squash and vegetable broth. Bring to a boil, then simmer until the squash is tender, about 20 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot and stir in the coconut milk, salt, pepper, and nutmeg. Heat through and serve.
