Ingredients 

Main Ingredients

  • 1 medium cabbage, chopped
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add carrots and cook for another 5 minutes.
  4. Stir in cabbage, cook until slightly wilted.
  5. Pour in vegetable broth and diced tomatoes.
  6. Add salt, pepper, thyme, and basil.
  7. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
