Ingredients 

Main Ingredients

  • 1 lb Chicken Thighs cut into bite-sized pieces
  • 1 lb Andouille Sausage sliced
  • ½ cup Vegetable Oil
  • ½ cup All-Purpose Flour
  • 1 Onion chopped
  • 1 Green Bell Pepper chopped
  • 2 stalks Celery chopped
  • 4 cloves Garlic minced
  • 6 cups Chicken Broth
  • 2 teaspoon Cajun Seasoning
  • 1 teaspoon Dried Thyme
  • 2 pcs Bay Leaves
  • ¼ cup Chopped Parsley for garnish
  • 6 cups Cooked White Rice for serving

Instructions 

  1. Heat oil in a large pot over medium heat. Whisk in flour to make a roux. Stir constantly until it turns a deep brown color.
  2. Add chopped onion, bell pepper, and celery. Cook until softened.
  3. Stir in garlic and cook for another minute.
  4. Add chicken and sausage. Cook until chicken is browned.
  5. Pour in chicken broth. Add Cajun seasoning, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Serve gumbo over cooked white rice. Garnish with chopped parsley.
