Main Ingredients
- 1 lb chicken breast, diced
- 1 lb andouille sausage, sliced
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 cup diced celery
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 2 teaspoon Cajun seasoning
- 1 lb pasta (penne or rotini)
- 1 cup sliced green onions for garnish
- 1 cup chopped parsley for garnish
1. In a large pot, cook the chicken and sausage over medium heat until browned.
2. Add the onions, bell peppers, celery, and garlic. Cook until vegetables are tender.
3. Stir in the chicken broth, diced tomatoes, and Cajun seasoning. Bring to a boil.
4. Add the pasta and reduce heat. Simmer until pasta is cooked and liquid is absorbed.
5. Garnish with green onions and parsley before serving.
