Ingredients

  • 1 lb Chicken breast cut into bite-sized pieces
  • 2 cups Calabaza squash peeled and cubed
  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Chicken broth

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Add the cubed calabaza squash, salt, and black pepper. Stir to combine.
  5. Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for about 20-25 minutes, or until the squash is tender and the chicken is cooked through.
  6. Serve hot and enjoy!
