Ingredients 

Main Ingredients

  • 2 lbs beef shank cut into chunks
  • 1 large onion quartered
  • 3 cloves garlic minced
  • 2 ears corn cut into thirds
  • 3 large carrots cut into chunks
  • 3 medium potatoes cut into chunks
  • 1 cup green beans trimmed
  • 1 cup cabbage chopped
  • 1 bunch cilantro chopped
  • to taste salt
  • to taste pepper
  • 8 cups water

Instructions 

  1. 1. In a large pot, add the beef shank, onion, garlic, and water. Bring to a boil, then reduce to a simmer. Cook for about 1 hour, skimming off any foam.
  2. 2. Add the corn, carrots, and potatoes. Continue to simmer for another 30 minutes.
  3. 3. Add the green beans and cabbage. Cook for another 20 minutes, or until all vegetables are tender.
  4. 4. Season with salt and pepper to taste. Stir in the chopped cilantro just before serving.
