Canadian Yellow Split Pea Soup with Ham

Main Ingredients
- 2 cups yellow split peas rinsed and drained
- 1 large onion chopped
- 2 cloves garlic minced
- 2 medium carrots chopped
- 2 stalks celery chopped
- 1 pound ham hock
- 8 cups water
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 2 teaspoon salt to taste
1. In a large pot, combine the yellow split peas, onion, garlic, carrots, celery, ham hock, water, thyme, and black pepper.
2. Bring to a boil, then reduce heat to low and simmer for about 2 hours, or until the peas are tender and the soup has thickened.
3. Remove the ham hock, shred the meat, and return it to the pot. Discard the bone.
4. Season with salt to taste and serve hot.
