Ingredients 

Shells

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 2 tablespoon unsalted butter cut into small pieces
  • ½ cup white wine

Filling

  • 2 cups ricotta cheese drained
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips

Instructions 

  1. In a mixing bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Add the beaten egg and wine, mixing until dough forms. Knead until smooth. Wrap in plastic and let rest for 30 minutes.
  3. Roll dough out thinly and cut into circles. Wrap around cannoli tubes and seal edges with a bit of beaten egg.
  4. Fry in hot oil until golden brown. Remove and drain on paper towels. Let cool, then remove from tubes.
  5. For the filling, mix ricotta, powdered sugar, and vanilla until smooth. Fold in chocolate chips.
  6. Fill cooled shells with ricotta mixture. Serve immediately.
