Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • ¼ cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Let quinoa cool.
  4. In a large bowl, combine quinoa, cherry tomatoes, mozzarella, and basil.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Season with salt and pepper. Toss to combine.
