  • 1 cup granulated sugar
  • ¼ cup water
  • ½ cup heavy cream room temperature
  • 2 tablespoon unsalted butter room temperature
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions 

  1. In a medium saucepan, combine sugar and water over medium heat. Stir until sugar is dissolved.
  2. Increase heat to high and bring to a boil without stirring. Cook until the mixture turns a deep amber color, about 10-12 minutes.
  3. Remove from heat and carefully whisk in the heavy cream. The mixture will bubble vigorously.
  4. Stir in butter, vanilla extract, and salt until smooth. Let cool slightly before using.
