Instructions
1. Heat some oil in a large pot over medium heat. Add the chopped onion, garlic, bell pepper, and carrot. Cook until softened.
2. Add the fish stock, coconut milk, thyme, and Scotch bonnet pepper (if using). Bring to a boil.
3. Reduce the heat and add the fish chunks. Simmer for about 10-15 minutes until the fish is cooked through.
4. Season with salt and pepper to taste. Remove the Scotch bonnet pepper before serving.
