Carrot Ginger Soup Recipe
A warm, comforting soup made with fresh carrots and ginger.

Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 tablespoon Ginger grated
- 6 cups Carrots peeled and chopped
- 4 cups Vegetable broth
- 1 cup Coconut milk
- to taste Salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and grated ginger, cook for another minute.
Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until carrots are tender.
Use a blender to puree the soup until smooth.
Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
