Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 6 cups Carrots peeled and chopped
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and grated ginger, cook for another minute.
  4. Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until carrots are tender.
  5. Use a blender to puree the soup until smooth.
  6. Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
