Ingredients 

Main Ingredients

  • 1 kg Carrots peeled and chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat some oil in a large pot over medium heat.
  2. 2. Add the chopped onions and garlic, and sauté until translucent.
  3. 3. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth.
  5. 5. Return the soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Heat through before serving.
