Cashew Alfredo Pasta
A creamy, dairy-free Alfredo pasta made with cashews.

Main Ingredients
- 2 cups Cashews soaked in water for 2 hours
- 1 cup Water
- 3 cloves Garlic minced
- 2 tablespoon Nutritional Yeast
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt or to taste
- 1 lb Pasta any kind
1. Soak cashews in water for at least 2 hours.
2. Cook pasta according to package instructions. Drain and set aside.
3. In a blender, combine soaked cashews, water, garlic, nutritional yeast, lemon juice, and salt. Blend until smooth.
4. In a saucepan, heat the cashew sauce over medium heat until warm, stirring occasionally.
5. Toss the cooked pasta with the warm cashew Alfredo sauce. Serve immediately.
