Cauliflower Fried Rice Recipe
A healthy, low-carb alternative to traditional fried rice.

Main Ingredients
- 1 head Cauliflower cut into florets
- 2 tablespoon Olive oil
- 2 cloves Garlic minced
- 1 cup Frozen peas and carrots thawed
- 2 tablespoon Soy sauce low sodium
- 2 units Eggs beaten
- 2 units Green onions sliced
1. Pulse cauliflower florets in a food processor until they resemble rice grains.
2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
3. Add peas and carrots, cook for a few minutes until tender.
4. Push veggies to the side, pour beaten eggs into the skillet, scramble until cooked.
5. Add cauliflower rice and soy sauce, stir well to combine. Cook for another 5-7 minutes.
6. Garnish with sliced green onions before serving.
