Ingredients 

Main Ingredients

  • 2 tablespoon Butter plus extra for greasing
  • 2 tablespoon All-purpose flour
  • 1 cup Milk warmed
  • 1 cup Grated cheese Gruyere or Cheddar
  • 3 large Eggs separated
  • 1 pinch Salt
  • 1 pinch Cayenne pepper

Instructions 

  1. Preheat the oven to 375°F (190°C). Grease the souffle dishes with butter.
  2. Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1-2 minutes.
  3. Gradually whisk in the warmed milk until smooth and thickened. Remove from heat.
  4. Stir in the grated cheese until melted and smooth. Season with salt and cayenne pepper.
  5. Beat the egg yolks and stir them into the cheese mixture.
  6. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold them into the cheese mixture.
  7. Spoon the mixture into the prepared souffle dishes and bake for 20-25 minutes, until puffed and golden.
